Grilled-Baked Brownies

1 stick butter
4 oz bittersweet chocolate, broken in pieces
3/4 c. flour
1/4 c. cocoa
1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
2 eggs
1 tsp vanilla
3 oz. bittersweet chocolate, roughly chopped.

Prepare grill or preheat oven to 350. Grease wells of preseasoned cast iron biscuit pan.

In saucepan, melt butter and chocoalte pieces, stirring constantly. let cool.
In a bowl, whisk together sugar, eggs, and vanilla. Add chocolate mixture, then flour mixture until combined. Stir in chopped chocolate.
Divide among prepared wells, spreading evenly. Bake until tops are shiny and toothpick comes out with few crumbs, 20-30 min.

AWESOME!!!!!

Cornbread Panzanella Salad

EXCELLENT<> EXCELLENT

1/2 c. mayo
1/4 c. buttermilk
1 tbsp sherry vinegar or cider
salt
pepper
hot sauce (optional)
1 recipe cornbread
2 cups argula
1 1/2 c tomatoes, diced
1/2 of cucumber, peeled, seeded and cut up
1 celery stalk, sliced
1/2 c fresh basil
2 tbsp fresh italian parsley
2 tbsp mint leaves
1/3-1/2 c. bottled corn relish or whole corn (Trader Joe's Corn salsa is great)
1 recipe lemon roast chicken

For dressing, combine, mayo, buttermilk, vinegar. Season to taste with salt, pepper and if using hot sauce. Cover and chill untill serving.
For cornbread, make your favorite recipe in your skillet. cool and cut into chunks.
Combine salad ingredients, slice chicken on top, then corn, then cornbread and cover with dressing!!!!!

Chicken: 2 3 lb chickens
2 lemons quartered
4 bay leaves
6 cloves garlic
6-8 fresh herb sprigs, like rosemary
ground pepper
3/4 c. white wine or chicken broth
salt

Insert above into chicken and roast at 375 .

*****Easy directions. I used chicken breasts and marinated them in lemon juice, bay leaves, garlic, rosemary and chicken broth. then grilled them and sliced them. Very good.
Also used any salad you like. We recently used the other salad, best ever, on this blog and put the rest on top. Try it, you will love it!!

Italian Bread

Italian Bread

A great recipe if you need good bread fast. Many variations can be made also.

1 pkg yeast (or one tbsp)
1 tsp sugar ( or honey)
1 cup warm water
2-3 cups bread flour
2 tbsp olive oil
1 tsp salt

Combine yeast, sugar and water in bowl. Let stand 5 min. Add 2 cups flour, oil, and salt and beat at low speed. Add additional four until dough leaves side of bowl. When enough flour has been added the dough will look smooth. Increase speed to med and beat 5 min. Cover and let stand 30 min. Then punch down and roll out to make a 12 in. loaf. Bake 400 for 16 min.

**Use your imagination with this. I usually use multigrain flour. also have added herbs, cheese, etc. a Good pizza dough too.

Grilled Chicken with White Barbecue Sauce

Grilled Chicken

1 tbsp dried thyme
1 tbsp dried oregano
1 tbsp cumin
1 tbsp paprika
1 tsp onion powder
1/2 tsp salt
1/2 tsp pepper

10 chicken thighs. ( i used breasts and cut them in big strips)

Combine first seven ingredients. Rinse chicken and pat dry. Rub mixture all over chicken. Place in ziploc and chill for 4 hrs. Then grill 8-10 min per side until done. Serve with sauce.

White BBQ Sauce

1 1/2 c mayo
1/4 c. white wine vinegar
1 garlice clove, minced
1 tbsp ground pepper
1 tbsp spicy brown mustard
1 tsp sugar
1 tsp salt
2 tsp horseradish.

Stir ingredients together until all blended.
**Only thing i changed is the sugar, of couse. you can use agave, honey or maple syrup instead.
